Wedding Cakes 101 for Wedding Planners
Wedding cakes are one of my very favorite things…soft, moist cake filled with layers of decadent icing then decorated to perfection. What could be better? Today we are sharing everything you need to know about wedding cakes so you can help your clients choose, taste, and design their perfect wedding cake.
Let’s start with types of cake flavors. There are several different cake flavors available, ranging from the more traditional white cake to the less traditional bananas foster cake. Below are some of the more popular cake flavors:
Whatever your client chooses, be sure it’s something they will enjoy. Most bakeries will allow clients to choose two or three flavors at no additional charge. This ensures everyone gets what they like… even mom!
Next up is the filling that goes between the cake layers. Every bakery has different options but the most common are buttercream, fruit fillings, and mousses.
Now that we have the cake and filling basics covered, let’s talk through my favorite part, the icing! Here are the types of icing along with descriptions:
Some bakeries do group tastings for wedding cakes at a particular time each week while others will schedule individual tastings for you and your clients. The cake designer may have a general sampling of flavors to try or they may give your client the option to choose their cake flavors for the tasting.
Wedding cakes are typically priced per serving. There may be additional design fees, as well as delivery and setup fees. Some companies price per cake based on the size and intricacy of the design. Cake stands may also be rented at an additional cost.
When inquiring with a bakery or cake designer for your clients, ask if they include setup and delivery. It’s typically against health codes for a wedding planner to handle food and cake. Plus, you don’t want to take on the responsibility for transporting a delicate wedding cake that could become damaged or spoiled while in your possession.
Bakeries have a variety of ways for your client to choose their cake design. More traditional bakeries provide portfolios of previous cakes they have created for your clients to choose from. Minor adjustments like color scheme and flower choices can be made, but otherwise the cake will be just like the photo. Some companies are more inclined to fully customize the design to meet the needs of the client, utilizing items such as the bridal gown, invitation, linen patterns and flower choices to create a unique cake. If a custom cake is a priority for your client, the latter would be the better option.
Designing the cake table is something that many people overlook, but it’s an important piece to be considered. The table size, linen choice, and table adornments all play a roll in how the cake is displayed. Be sure the table is in proportion to the size of the cake. There’s nothing worse than seeing a tiny two tier cake sitting on an 8 foot long table all alone. Choose a table linen that compliments the cake and adorn the table with matching event decor. A floral bouquet, candles, cake serving set, flower petals or a cake stand could be the simple accent that completes the look.
